How to Make Rice Cream

Make the rice cream by first pouring the milk into a saucepan. Next, add a cinnamon stick, lemon zest, or orange zest to flavor it, and then cook it until it boils.

Rinse the rice to loosen some of its floury parts. Stir the rice and sugar into boiling milk. Use a whisk to avoid lumps. Cook the rice for 10 minutes. Make sure it doesn’t stick to the bottom of your pan.

Once the cream has become thick and creamy, take it off the heat and allow it to cool. Next, pour the mixture into molds that are single-portioned. Cover the molds with cling wrap and let the mixture rest in the fridge for approximately 2 hours. Add a pinch of cinnamon, cocoa powder, or fresh fruit. Use a mint leaf to decorate.

Variants of Cream of Rice

Rice flour can be substituted for rice. The dessert will be creamier. Consider 100g of rice flour to make 250cl of milk.

This recipe can also be made with brown rice. For 200g of brown rice, you will need 2 liters of milk. Brown rice takes longer to cook.

Honey can be used to make the rice creamier and sweeter. However, you should only add honey after the rice has been cooked in boiling milk for at least 10 mins. Always use caution and use a whisk to mix it well.
