Spinach and feta rolls

These easy-to-make rolls can be made with only a few ingredients: fresh spinach, feta, and flaky pastry. Enjoy them plain or with your favorite condiments like ketchup and spicy tomato chutney.
INGREDIENTS
- One sheet of frozen puff pastry
- 120 g fresh spinach (approximately 3 cups)
- 200 g Danish feta cheese
- 1 Cup panko bread crumbs
- One egg Whisked (reserve approx 1.5 tbsp For brushing the top of the rolls
- 1 tsp Fennel seeds and extra sprinkled on top
- 1/2 teaspoon Salt Plus, sprinkle some extra on top
- 1/2 teaspoon Cracked black pepper
INSTRUCTIONS
- To assemble:

- Preheat the oven to 200°C. Bake on a parchment-lined baking sheet.
- While you prepare the spinach-feta filling, take the puff pastry from the freezer.
- On medium heat, heat a medium-sized skillet. Mix the spinach leaves with 1/4 cup water. Stir gently for 30 seconds to one minute, and let the spinach leaves wilt. Set aside to cool.
- In a large bowl, combine the feta, breadcrumbs, and eggs. Add in the fennel seeds, Salt, and pepper.
- After the spinach has cooled, squeeze out excess water using your hands. Then chop it roughly. Mix the ingredients with your hands.
- The puff pastry paper should be cut in half. Two long rectangles will remain.
- Place the pastry rectangles, starting at the shorter edge closest to your face, and make a log-like shape with the filling. Make sure the packing is compact and neat. Continue the process with the second rectangle.
- Use the plastic backing of the puff past to roll each rectangle into a log. Seal it with your fingers.
- Each log should be cut into six equal lengths.
- To cook

- Use the egg to wash each roll.
- Sprinkle with fennel seeds, Salt.
- Bake for 20 minutes or until golden and crisp.
